Lazarakia Brioche Breads
In Greece we bake some brioches called Lazarakia and we give them to the kids one saturday before easter. Ingredients
Please find below the ingredients you need for the recipe,
1000 gr. flour for cakes
280 gr. sugar
1 cup water or orange juice
50 gr. fresh yeast
1 teaspoon mahlab
1 teaspoon kakoule
Zest of an orange
2 cups oil
1 1/2 cups raisins
Execution
Melt the yeast in lukewarm water. Put the flour in the mixer with the oil, the spices, the aromatics and the orange zest. Next add the yeast mixture into the flour and start kneading slowly for about 15 minutes. Just before you stop add the raisins as well. Let the dough rise about an hour so it’s double in size. When it’s ready try to shape the dough in an small breads and some cords for hands. Put each piece into a baking pan. Stick 2 cloves in order to give the eye styles and let them rise for a while. Bake at 180 degrees about 15-20 minutes and the Lazarakia brioche breads are ready to taste.
