Greek Liver Soup
The Greek Easter is coming, so we shall be prepared for a special meal. Then what about a classic Greek recipe for liver soup, a recipe rich in nutritional values, ideal for a complete family meal. Ingredients
Please find below the ingredients you need for the recipe,
500 gr. liver
1 cup (tea) rice
1 onion and some parsley
Scallion
Salt and pepper
2 eggs
1 lettuce
1 tablespoon corn flour
2 lemons, water
Extra virgin olive oil
Fresh Anise
Execution
Wash the liver very well and boil it for a while then cut it into small bites. Use a deep pot in order to saute the liver with olive oil and both the chopped onions and the scallions. Then add the water and boil them for 30 minutes. Next chop the lettuce and boil it into the pot, keep boiling for about 20 minutes. Then add the rice, the salt and the pepper. Last but not least in order to get a soup thick enough (veloute), you have to add the lemon egg mixture. Beat the eggs with the lemon juice and the corn flour in a large bowl. Then use a large spoon and add some of the hot soup, carefully one at a time, while you keep stirring well. This way your lemon eggs mixture gets the temperature of the soup while at the same time combines with the rest of the ingredients giving a nice veloute style.
Cooking Tips
Before add the lemon egg mixture remove from heat.
