Easter Pumpkin Brioche
We are just a few days before the Greek Easter and we though that’s a great time to cook some Easter brioche cakes made by pumpkin. Ingredients
Please find below the ingredients you need for the recipe,
1200 gr. flour for cakes
300 gr. Sugar
125 ml. oil
1 1/2 cups boiled pumpkin
100 gr. fresh yeast
1 spoon (tea) mahlab
1 spoon (tea) kakoule
Zest of an orange
Execution
Boil the pumpkin and with a large spoon try to remove the flesh in order to get the pumpkin stuff. Put the flour into the mixer with the spices, the aromatics and the orange zest. Next add the yeast and the sugar and start mixing slowly. Pour the pumpkin mixture and the oil, keep mixing them together about 15 minutes. Let the dough double in size about an hour. When it’s ready try to shape the dough in an oblong sheet, give the form you like and put them aside to rest and inflate. Bake in preheated oven in the kitchen at 180 degrees about 20-30 mins.
