Custard Pie with Semolina

What about a special Greek traditional recipe for a delicious dessert, well today we’re cooking the classic custard pie with semolina. So what are you waiting for, put an apron on, up your sleeves and grab your knifes.

Please find below the ingredients you need for the cream,

Pie crust sheets
150 gr. melted butter
2 lt. milk
4 eggs
6 yolks
200 gr. fine semolina
2 tablespoons butter
2 vanillas
200 gr. sugar

Please find below the ingredients you need for the syrup,

700 gr. Sugar
1/2 lt. water
1 cinnamon stick
1 lemon

Heat the milk with the sugar in low fire until it starts to boil. In a deep bowl add the eggs, the yolks, the semolina and the vanilla and beat them well enough. Then add some of the warm milk into the mixture give a brave whisk and throw all the stuff back to the pot. Keep stirring on low fire until the cream gets smooth and nice. Then pull off the fire and add the butter giving a final whisk. Let it cold aside for some time. Flatten two crust sheets smearing them with some butter before, then pour some cream and start wrapping until you shape a nice roll, hint try to wrap the edges inside in order to prevent your cream to overflow.

Repeat this process in order to make more rolls regarding your needs. Put the rolls in a baking pan in rows side by side, smear with some butter. Use the oven to bake at 200 degrees for 10-15 mins until they get a nice gold brown color. Boil the sugar, the water, the cinnamon stick and the squeezed lemon for 5 minutes and pour it on the top of custard pie. Be aware syrup should be hot and the pie cold enough in order to get the best result. That’s it you are done.
