Cream Puffs with Chocolate Mousse

Ingredients

Please find below the ingredients you need for the puffs,

150 gr. flour
100 gr. butter
Some vanilla
1/2 teaspoon salt
125 ml milk
125 ml water
4 eggs
1 teaspoon sugar

Please find below the ingredients you need for the vanilla cream,

500 ml milk
6 yolks
125 gr. sugar
Some vanilla
40 gr. corn flour

Please find below the ingredients you need for the chocolate mousse,

350 gr. sour cream
225 gr. dark chocolate
4 tablespoons cocoa powder
350 gr. whipped cream

Execution

For the cream puffs, boil the milk with the butter, the water, the salt and the sugar together into a deep pot. Then pour the flour and start kneading until the dough becomes easy to work and ball in shape. Let the dough rest about a few minutes and then start kneading again in medium speed. Pour the eggs one at a time until the dough gets shiny. Put it into a pastry bag and do some rosettes on a pan using greaseproof paper for the bottom. Bake the in 200 degrees for 20 minutes until they get a nice golden brown color. For the vanilla cream, boil the milk into a pot with the vanilla. In a bowl beat the yolks with the sugar and the corn flour. Pour 5-10 spoons milk into the eggs mixture while still stirring and then add it all back in the pot with the rest of the warm milk. Keep stirring well until the cream gets more thick and you are done.

For the chocolate mousse, boil the sour cream in a pot and cut the chocolate into small pieces. Pour the hot cream into the chocolate pieces and add the cocoa powder. Start stirring them until the chocolate is melt. Then add the whipped cream and mix in order to combine them together.Finally in order to set the body of the dessert put a layer of the mousse, fill the puffs with the vanilla cream place them on the top of the first layer and add another layer of chocolate mousse.
